The combination of almonds, rice and cinnamon in this Horchata recipe makes for a creamy and delicious drink, and it’s so simple to make — just soak, blend, and strain!

  • 1 cup natural almonds
  • ½ cup uncooked brown rice
  • 1 cinnamon stick
  • 2 to 3 tbsp pure maple syrup
  • ½ tsp pure vanilla extract
  1. Fill a large bowl with 4 cups of water and add the almonds, rice and cinnamon stick. Allow to soak for at least one hour (or overnight).
  2. Pour the soaked almonds, rice and cinnamon stick, along with the soaking water, into the pitcher of a high-speed blender. Add the maple syrup and vanilla and blend until smooth. Strain the milk through a nut-milk bag, a few layers of cheesecloth, or a fine mesh strainer.
  3. Enjoy immediately or refrigerate until ready to use.
