Tofu Scramble Breakfast Tacos

6-8 Tortillas

 
Have a fiesta this weekend and serve up some easy vegan breakfast tacos. They will make your taste buds dance! 

Ingredients: 
  • 6-8 small tortillas

 
Scramble

  • 350g Package of extra firm tofu
  • ¼ cup finely chopped onion
  • 1 clove minced garlic
  • ¼ tsp turmeric
  • ¼ tsp smoked paprika
  • ½ tsp cumin
  • 1 Tbsp nutritional yeast
  • Salt and pepper (to taste)
  • Oil

 
Toppings

Directions: 
  1. In a medium pan add a dash of oil and the chopped onion. Sautee over medium heat until the onion is softened.
  2. Drain any liquid from the tofu package and using a clean dish towel, press excess liquid out of the tofu block. (Just to a point where it’s not soaking – it will still be moist)
  3. Using your hands, crumble tofu into the pan.
  4. Add the rest of the scramble ingredients and mix well. Continue to cook over medium until warmed and any liquid has disappeared.
  5. While the scramble is cooking, start warming tortillas in a dry pan over medium heat. Flip to warm each side.
  6. Start assembling tacos. Add tofu scramble, any desired toppings, and chipotle salsa. Enjoy!
